What is mezcal?
Mezcal is any spirit that’s distilled from the agave plant. All tequilas are mezcal, but not all mezcal are tequilas. Mezcal is typically made in the state of Oaxaca and has an ABV content around 40-50%.
It can be made from over 30 varieties of agave, but the most common are tobalá, tobaziche, tepeztate, arroqueño and espadín.
How is mezcal made?
Mezcal is made by first harvesting agave. Once matured, farmers chop away the leaves of the agave plant to get to the heart of the plant called the piña.
The piñas get roasted in an underground pit with hot rocks for a few days and then it gets ground up into a pulp. Then, the pulp is placed in copper or clay pots to ferment.
How to Drink Mezcal?
To enjoy mezcal, start by selecting a high-quality brand that suits your taste preferences, considering factors like smokiness and complexity.
Serve it in a small glass or a copita to savor its aromas, then take small sips to appreciate its intricate flavors.
Remember to cleanse your palate between sips with a slice of orange and a sprinkle of sal de gusano (worm salt) for the full experience.
Is Mezcal the same as tequila?
Mezcal is made with 100% agave content, while tequila is made with about 50%. Mezcal and tequila are made in different regions as well. Mezcal is produced in Durango, Guanajuato, Guerrero, San Luis Potosi, Tamaulipas, Zacatecas, Michoacán, Puebla and Oaxaca. Tequila is made in Michoacán, Guanajuato, Nayarit, Tamaulipas and Jalisco, which is where the actual town of Tequila is located.
Mezcal and tequila are produced in different ways. Mezcal is made by cooking the piña in underground pits filled with hot rocks and charcoal, while tequila is made by steaming the agave in an industrial oven before distilling it in copper pots.
Tequila and mezcal have a different flavor profile. Tequila has a smooth, sweet flavor that most people are familiar with. Mezcal on the other hand has a savory and smoky. The smoky flavor is because it picks up the smokey taste from the underground ovens that the agave is cooked in.
