Mezcal is made by first harvesting agave. Once matured, farmers chop away the leaves of the agave plant to get to the heart of the plant called the piña.

The piñas get roasted in an underground pit with hot rocks for a few days and then it gets ground up into a pulp. Then, the pulp is placed in copper or clay pots to ferment.

Tequila is made in Michoacán, Guanajuato, Nayarit, Tamaulipas and Jalisco, which is where the actual town of Tequila is located.
