Constantina Sotelo Octopus Albariño (Skin-Contact)

Octopus is a skin-contact Albarino aged in amphora with no sulfites added. Macerated on its skins and stirred 3 times/day until spontaneous fermentation completion. Separated from its skins and aged in round clay amphora with continuous batonnage. Hand harvested from a family plot of 50-year trellised vines, 1km from the sea. No fining/filtering and no sulfites added (3 PPM total sulfites)
