What is tequila made from?

Tequila is a distilled spirit that's made from the blue agave plant. It gets its name from the area in which it's produced, surrounding the city of Tequila in the central-western Mexican state of Jalisco. Mexican law states that tequila can only be produced in the state of Jalisco and limited towns in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas.

Tequila is a type of mezcal, which is a spirit produced from the agave plant. Mezcal can be made with a number of different agave varieties. However, unlike mezcal, tequila can only be made with a specific blue agave plant, Weber's blue agave. The agave plant can take over seven years to fully mature. Once matured, the agave farmers cut off the leaves of the plant and expose the heart (piñas) which are sent off to a distillery to be turned into tequila.
