Mexicans have long added a squeeze of fresh lime and a pinch of salt to lagers or pilsners, and in the 1980s, this custom gave rise to the crisp beer cocktail known as the michelada. The drink's popularity increased not only in Mexico but also in American restaurants and bars as a result of the immigration boom. Even the world's largest brewer, Anheuser-Busch, now sells a ready-made version, while the Mexican brands Modelo and Victoria import theirs. But there is much misunderstanding about what constitutes a true michelada.
The cocktail's history is the subject of several theories. Some think it's a contraction of the Spanish slang phrase "me chela helada," which means "my ice-cold beer." According to a more detailed yet dependable source, the drink was invented at the Club Deportivo Potosino bar in San Luis Potosi, when club member Michel Esper would order his beer over ice and laced with lime juice and salt. It eventually became known as michelada because other club members began requesting "La Limonada de Michel."The typical michelada, also known as “chelada”, is a light-bodied beer with fresh lime juice added to it that is served over ice in a glass with a salt rim. On a hot summer day, this is the variety that is the most cooling and is the easiest to drink. However, there are several alternatives, and there are as many recipes as there are servers and drinkers. For instance, extra components for a michelada Cubana can include Maggi spice sauce, Worcestershire sauce, soy sauce, hot sauce in a bottle, cayenne pepper, powdered chile “piquin”, or commercially available salt and chile blends. To make the salty rim of the glass adhere to it, some people like to pour liquid “chamoy”, a Mexican condiment created from pickled plums.
Contrary to common misconception, Clamato, Bloody Mary mix, and tomato juice are not typical ingredients for micheladas. Clamato con Cerveza, a common cantina specialty that's great on a hot afternoon or as a tried-and-true cure for the morning after, is a beer that contains Clamato and spices. This is referred to in my family as “un Clamatito”. The addition of Bloody Mary mix, whether it be store-bought or homemade, is a Canadian creation that appears to have become the most generally used recipe in the U.S.
Make yourself a real Michelada for Michelada Day
-46 ounces of tomato juice
-Lemon juice, 4 ounces
-Grapefruit juice, 1 ounce
-Simple syrup, 1 ounce
-3 teaspoons Worcestershire sauce
-Tabasco, two tablespoons
-One teaspoon of bitters
-Two teaspoons of horseradish
-Paprika, 1.5 Tablespoons
-Old Bay Seasoning, two tablespoons
-Celery salt, 1.5 tablespoons
-One teaspoon of black pepper
-Kosher salt, 0.5 Tablespoon
CERVEZA PACIFICO CLARA
Mix all the ingredients well then serve in a tall glass.
For the riming mix 200g Sugar, 500g Grey salt, 20g Chile pasilla, and 20g toasted/grounded Aleppo chile.
